Canning Summer's Veggies With Chef Kathy Gunst

We're in that summer glut of fresh veggies that makes you (almost) forget winter's mealy, lifeless tomatoes, the filmy, bagged spinach and the musty flakes of dried basil. That's what's coming for us-- unless you're chef Kathy Gunst. Around this time each year, she rolls up her sleeves and starts dropping her fresh tomato sauce and homemade peach butter into jars for safekeeping until the depths of winter.
