According to the United Nation's Food and Agriculture Organization, animal agriculture is responsible for 6 billion tons — or between 10-20% of total greenhouse gas emissions globally.

Tufts University is focused on a different approach: cellular agriculture. The university recently received a grant from the state to continue this research and establish the Foodtech Engineering for Alternative Sustainable Technologies center.

The center's director, David Kaplan, and Nicole Tichenor Blackstone, assistant professor of agriculture, food, and environment at Tufts, joined WBUR's Radio Boston to discuss.
